Nigerian bakers are turning to pureed sweetpotato as a substitute for wheat flour in breadmaking as the Ukraine war sends prices soaring. Rather than completely substituting for flour, the orange-fleshed sweet potato (OFSP) is used to make flour go further in breadmaking recipes, according to the Premium Times newspaper.
